Nicolas was born in Colombia, and when he was very young, he remained in Colombia so he could continue his studies while his parents could help the family and follow a better job opportunity in Spain. He discovered living alone at 14 made him very independent, and it changed his life. After completing his studies, Nicolas was able to reunite with his family in Spain. By this time, his passion for cooking was ignited, as well as his desire to travel abroad again.
Intrigued by Denmark’s world-renowned restaurant scene, Nicolas relocated to Copenhagen. A friend introduced Nicolas to ISS, where he met his future manager in the service section. Once he was welcomed by his friendly colleagues, it didn’t take long before he discovered the kitchen, and he was fascinated. He determined that was the place he most wanted to be, and soon he was given an offer to join the kitchen staff.
His colleagues helped him feel welcome - teaching him Danish, so he could understand his new home and each of the recipes he was making. Nicolas turned his humble interest in food and his early exposure to commercial kitchens, into the beginning of a new career as a chef - a place where he could fully express his creativity and appreciation for the world’s different cultures.
Today, Nicolas and his team are proud to prepare delicious and healthy meals for over 1,200 people each day at one of our large clients in Denmark. He successfully realised his dream to combine his passion for food with making people happy.
